Shrimp/ prawn Biriyani

Ingredients :

For Marination:

Prawn /Shrimp — 1 kg
Ginger Garlic Paste — 1 tsp
Red chilli powdr — 1 tsp
corriander powder – 1 tsp

For Cooking Rice:

Basmati rice — 3 cup
Oil — 1 tsp
Salt — 1 tsp
Cloves — 2nos.
Cardamom — 2 nos.
Shah Jeera ( if not, cumin seeds) — 1 tsp
Cinnamon — 1 in piece
Bay leaves — 1 no.

For Masala :

Cinnamon — 1 inch piece
Cardamom — 2 nos.
Cloves — 2 nos.
Bay leaves — 1 no.
Ghee — 1 tbsp
Oil — 2 tbsp
Onion — 4 nos.
Tomato — 2 1/2 nos.
yougurt – 1 cup
Green chillies — 10 slit
chopped Mint Leaves — a handful
chopped coriander leaves — a handful
Saffron colour — 1/2 tsp

Method :

Marination :

Marinate the shrimp with the given items for minimum half an hour or do it overnite. This ensures shimp to be juicy when it’s cooked.

Rice :

Soak the rice for 10 minutes. By the time take a big pot /bowl and fill it with 5 1/2 cup of water and add ghee and all the garam masala. Give it a boil. Add the rice slowly and cook rice till ( 3/4th cooked ). If the water is still left you U may drain the water .

For frying Onions:

Take oil in a kadai and deep fry 3 chopped oniond till golden, remove and keep aside.

For frying Prawns: 

Take some oil in a kadai and fry prawns in it  and keep aside

Preparing the Masala :

1.Take a kadai and add both ghee or oil . Add the cinnamon,cloves,cardamom and fry for few minutes. add choppen 1 chopped onion and fry till light brown.

2. Add chopped tomatoes and fry for some time

3. Add 1 cup yogurt

4.  Drop in the mint ,coriandetr leaves  and green chillies and fry for 5 sec. Add the 1/2 od fried onions.

5. Add Biriyani masala ( Shan biriyani or bombay biriyani) you can also make biriyani masala at home.

6. add the fried prawns.

7. Now layer the cooked rice on top od it

8. sprinke coriander leaves left fried onions and 1 tsp Garam masala powder.

9. add Saffron colour  on top

10. Close the lid and leave it in very slow flame for about 5 min

11.Then remove lid and mix everything  and its ready to serve.
