Ing :
200 gms Prawns – peeled and deveined
2 cups Coconut milk
3 tblspn. Oil
1/2 teaspn. Mustard seeds
6 Curry leaves
1/2 teaspn. Red chilli powder
1 teaspn. Cummin powder
1/2 teaspn. Turmeric powder
2 Green chillies – Slited
1 tblspn. Ginger-Garlic paste
1 teaspn. Sugar
Salt to taste
1 tblspn. Green coriander leaves – finely choppedwi
Method :
Marinate Prawns with little turmeric and salt for 15 – 20 minutes.
In a no-stick pan , heat 2 tblspn oil and stir fry prawns for 2 minutes. Keep aside in a bowl.
In the same pan…..add remaining oil and add mustard seeds. Once the seeds pop…..add curry leaves followed by gingerr-garlic paste. Saute for a minute or two.
Add prawns and saute for a minute. Add all the remaining ing……i.e red chilli powder, cummin powder and turmeric. Mix well.
Add Coconut milk, sugar and salt. Stir and cook until prawns are cooked.
Garnish with green coriander leaves.
Enjoy hot yummy curry with steamed rice…….and some crispies…..!!
